Infant cereals are a very popular and convenient means of providing nutricious meals when weaning to solid foods. As infants have low body mass, exposure to potentially harmful contaminants could have a disproportionate affect, and there is a common desire to ensure that the exposure of infants to potentially dangerous materials is minised as far as is practically possible

Acrylamide is formed at high temperatures in starch rich foods such as infant cereasl. It is a potential carcinogen and, although maximum limits in foods are not legislated, monitoring is still routine in the industry.
