Test Description

Process contaminants are chemical substances that are produced naturally in food during manufacturing or home-cooking. They are absent in the raw foods or raw materials used to make the food and are only formed when components within the raw foods or materials undergo chemical changes during processing. Furans may be formed at high temperatures during cooking and can co‑occur. Furans can form from a variety of substances naturally present in food, including ascorbic acid (vitamin C), carbohydrates, amino acids, unsaturated fatty acids and carotenoids.

Dietary exposure to furan and its methyl analogues such as 2-methyl furan and 3-methyl furan is a potential human health concern and advice is that foodstuffs are monitored to highlight any potentially unsafe levels. Additionally, risk management strategies are put in place to avoid production of these process contaminants taking place and to bring about the principle for any contaminant levels to be as low as reasonably achievable.
