The presence of metals in food is of particular concern due to their toxicity. These naturally occurring chemicals can occur as residues in food by a range of mechanisms such as their natural presence in the environment or contamination during food processing and storage. Their accumulation in the body can lead to harmful effects over time and their presence in foodstuffs is strictly regulated.
Heavy, toxic metals such as arsenic are often found in food, either as a natural contaminant or a contaminant from production.
Rice cakes can take many forms, owing to the flexible uses of rice itself. Rice cakes are also, by definition, processed. With these characteristics rice cakes can be susceptible to contaminants in multiple areas of production, including storage and growing. This extensive list of variants require flexible testing across a large range of characteristics. This requires effective proficiency testing to be utilised effectively, tracking your testing capabilities across a range of matrix and analyte combinations. Arsenic in rice is of particular concern due to its ubiquitous status as a staple crop. Rice cakes are consumed by children for whom the risk of contamination is more serious.
Rice cakes make up a large amount of foodstuffs consumed, both as a key ingredient and stand alone product. As such there is a large demand on the supply chain, giving rise to potential poor farming practices or storage practices. Accurate and extensive testing processes are therefore needed to mitigate these potential risks to the consumer.
