Test Description

Honey consists essentially of different sugars, predominantly fructose and glucose as well as other substances such as organic acids, enzymes and solid particles derived from honey collection. The colour of honey and consistency can vary considerably, along with its flavour and aroma depending on where it is produced.  Honey intended for human consumption must meet a specific composition which is outlined and detailed in the EU Honey Directive.

The analytes that are included in our honey proficiency tests are all important determinants in evaluating the quality of honey. This includes the individual sugars fructose, glucose and sucrose, as well as hydroxymethylfurfural (HMF) and Diastase.

In addition to our normal analytes of interest in honey, on this occasion we have included the analysis of lead (Pb) for the first time.  Due to the known health benefits of honey and that it is a foodstuff readily consumed by children and a wide population, it is essential that a strict quality control process is in place, especially for lead. Elevated levels of heavy metals, such as lead in honey, may result from and be an indication of environmental or processing contamination, or may originate from soil or plant species that the honey is derived.
