Test Description

EFSA has established a tolerable daily intake (TDI) for 3-MCPD which has been calculated as 0.8 micrograms per kilogram of body weight per day (μg/kg bw/day) for 3-MCPD and its fatty acid esters based on evidence linking this substance to organ damage in animal tests. Scientific evidence has shown that 3-MCPD is released from 3-MCPD esters by regular digestion in the human digestive tract and therefore are considered to have the same toxicological profile as 3-MCPD (European food legislation - Commission Regulation (EC) 1881/2006 for free 3-MCPD in hydrolysed vegetable protein and soy sauce).

Being able to identify and quantify these areas accurately and in acceptable detail require effective quality assurance processes. Fapas quality control materials are effective when addressing areas of improvement, and tracking these as a result. Quality control materials offer effective staff training tools as well as instrumentation calibration aptitude, from which to achieve accurate testing ability, free from unintentional bias.

Soy sauce is consumed worldwide, and as such there is a great demand on producers to achieve large yields. This can promote low quality products as supply chains are put under ever increasing pressure. Your effective testing is therefore required to protect the consumer from potentially harmful levels of MCPDs within soy sauce.
