The EU Food Information for Consumers Regulation No.1169/2011 lists 14 food allergens that must always be labelled in pre-packed and non-prepacked foods.
Crustacea are a well-known allergen. As such they are subject to strict regulations which challenge testing laboratories to achieve accurate results which are repeatable across a long timescale and range of testing environments.
