Gram for gram fish have more muscle than any other vertebrate, a male salmon or tuna can be nearly 70% muscle, which is one reason why fish are so cost-effective to consume. The muscles of fish are layered rather than bundled as in the other vertebrates. Fish muscle makes up the majority of the calorie intake in terms of diet as opposed to other parts of the fish and as such has a lower MRL. It is therefore important to employ effective testing practices to ensure you are meeting this lower levels of detection.
