The advantages of processed cheese, such as lower cost and longer shelf-life have led to mass-production of this foodstuff. With mass production comes a global supply chain and increased risk of contamination, therefore effective testing capabilities are required.
Cheese is consumed in large quantities globally and is also used as an ingredient in many processed foods. As such it is important to provide accurate test results to underpin the labelling figures.
Preservatives have been commonly used as additives in food and sorbic acid is a natural preservative added to cheese to inhibit the growth of mould and yeast and against a wide range of bacterial attack, extending its shelf life and maintaining quality.
Natamycin is a permitted food additive (E235) that is mainly regulated for use as a surface treatment for cheeses and sausage casings to prevent the growth of unwanted yeasts and moulds which result in losses during the long-term ripening of cheeses. Natamycin is a naturally produced anti-fungal agent from strains of Streptomyces natalensis. In some regions natamycin is regulated for use in other products such as yoghurts, juices, wine and bread, within the food itself, and not just as a surface treatment.
