Wheat flour is used within many different foodstuffs; as such there is a large demand across the globe. This can put global supply chains under pressure to satisfy this growing demand. This can lead to corner cutting strategies and poor practices being adopted. To mitigate these risks effective food tests must be highlighted to ensure only high quality wheat flour is offered to the consumer both as part of processed food products, and as an individual commodity.
Ergot alkaloids are mycotoxins which affect the circulation (vasoconstriction) and nervous system (neurotransmission) leading to distinct symptoms or types of ergotism in humans, the first with symptoms of fever, hallucination and behavioural changes (neurological effects) and the second with burning sensation and shooting pains in the fingers and toes (vascular effects), also known as St. Anthony’s Fire.
Mycotoxins are toxic secondary metabolites produced by fungi on agricultural commodities in the field or during storage. It is estimated at 25% of the world's food crops are affected, resulting in large commercial losses. Mycotoxins can cause serious health problems (including some being suspected carcinogens) and so are tightly regulated across the world.
