Test Description

Biscuits are consumed globally in large numbers which can put complex, global supply chains under pressure to meet demand, resulting in poor quality products being offered to consumers.

Fat is an essential part of the human diet, supplying nutritional components that the body needs to function. Too much fat in the diet, especially of nutritionally undesirable forms, can give rise to health problems. Hence, fat is subject to labelling requirements on food products and analyses are targeted towards this compliance.

Within this proficiency test the fat profile is to include total fat and cholesterol. This proficiency test includes butyric acid, as a measure of fat decomposition.

Butyric acid analysis may be used to determine the amount of milk fat in a product, as this is only present in milk fat. It has a strong odour which gives rise to the unpleasant smell when butter goes rancid due to the release of free butyric acid from the triglyceride form because of hydrolysis.
